Ham and Cheese Fritatta
Ingredients
6 eggs
1 cup chopped ham
1 bell pepper chopped
1/2 onion chopped
1 cup grated cheese (any kind will work except for parmesan)
1/2 tblsp olive oil
3/4 tsp salt
1/4 tsp pepper
Pre-heat the oven to 395 degrees. In a skillet over medium flame, saute the chopped bell pepper and onion in the olive oil for about 5 mins or until slightly tender. Add the chopped ham. In a large bowl, whisk the eggs, salt and pepper. Pour into the skillet without stirring the ingredients. Sprinkle with grated cheese. Put the skillet directly into the oven and bake for 25 mins or until the top is lightly browned. Remove from oven. With a knife, loosen the sides of the skillet from the fritatta. Place a plate directly on top of the skillet and (with an oven mit) turn upside down so that the fritatta falls on the plate. Then repeat the action with another plate on top so that the fritatta is facing up. Cut and serve
